Preheat the oven to 160 degrees. Fit the baking sheet with parchment paper and sprinkle with oil. Prepare the apple sauce. In a frying pan, melt the oil over medium heat. Cook until the apples soften a little, and the liquid will not become thick, about 5 minutes. Remove from heat, add cognac and mix thoroughly. Put the frying pan on the fire and cook for about 30 seconds while the alcohol evaporates. Remove from heat and cool to room temperature. Make a sprinkle. In a bowl, mix together the flour, like sugar, cinnamon and salt. Add the melted butter and hands to form large crumbs. Set aside. Prepare the cake. In a large bowl, mix flour, baking powder, soda, and salt together, set aside. Whisk together the butter and sugar in an electric mixer for 2 to 3 minutes. Add sour cream, egg, yolk and cognac, mix well. Add the mixture of flour and mix. Pour the dough into a prepared baking dish. Put on top of the apple sauce and evenly distribute the powder. Bake for about 55 minutes. Remove from the oven and allow to cool completely before serving.
