Put in a bowl and cover. Set aside. Wipe the frying pan, heat the remaining 2 teaspoons of oil over medium heat. Smash the eggs in a frying pan, season with salt and pepper. Fry for about 1 minute. Remove from heat and let stand for about 3 minutes. Put on each toast a mixture of spinach and 1 egg. Serve immediately.
