Recipe Spinach Cream

  • Bundles of spinach leaves - 3-4 pieces

In a large saucepan bring the salted water toBoiling. Add spinach and cook for about 1 minute. Drain the water in a colander, rinse the spinach with cold water. Squeeze the spinach to remove as much liquid as possible. Melt butter in a large saucepan over low heat. Add onions and garlic, season with salt and pepper. Cook, stirring, until the onion is soft, from 3 to 5 minutes. Add the cream cheese and milk, cook, stirring until the cheese melts. Add the spinach. Cook over medium heat until mixture is thickened, from 8 to 10 minutes. Add the nutmeg, season with salt and pepper.
