Bun with cinnamon and creamy glaze Recipe

  • Milk - 1 glass (for dough)
  • Butter unsalted - 3 Art. Spoons (for dough)
  • Flour - 3,5 glasses (for dough)
  • Sugar - 0,5 Glass (for dough)
  • Dry yeast - 2.25 teaspoons (for dough)
  • Salt - 1 teaspoon (for dough)
  • Vegetable oil - 1 st. Spoon (for the test - grease the pan)
  • Brown sugar - 0.75 cups (for filling)
  • Ground cinnamon - 2 st. Spoons (for filling)
  • Unsalted butter - 0.25 cups (for filling)
  • Salt - 1 pinch (for the filling)
  • Cream cheese - 120 grams (for glaze)
  • Powdered sugar - 1 Glass (for glaze)
  • Butter unsalted - 0,25 Glass (for glaze)
  • Vanilla extract - 0.5 teaspoons (for glaze)
  • Egg - 1 piece (for dough)

1. Make the dough. Mix the milk and butter in a bowl. Heat the mixture in a microwave until the oil melts, 30 to 45 seconds. Pour the mixture into a large bowl. Add 1 cup of flour, sugar, egg, yeast and salt. Beat with a mixer at low speed for 3 minutes. Add an extra 2 1/2 cups of flour. Beat at low speed. If the dough is very sticky, add more flour. Put the dough on a lightly floured work surface. Knead for about 8 minutes. You can also use a hook for the dough. Form a ball out of the test. 2. Sprinkle the bowl with vegetable oil. Put the dough in a bowl and roll in the oil. Cover with a plastic wrap, then a kitchen towel. Allow to rise in a warm place for about 2 hours, until it doubles in volume. To prepare the filling, mix the brown sugar, cinnamon and a pinch of salt in a medium bowl. Put the dough on the work surface. Roll out a rectangle measuring 27X37 cm. Lubricate the dough with butter, leaving the borders 1 cm at the edges. Sprinkle evenly the filling. 3. Turn the dough into a roll, put the seam down on the surface and cut into a sharp knife with 18 slices (each about 1 cm wide). 4. Sprinkle with oil two forms for baking. Put the buns in the form, cover with a kitchen towel and let rise in a warm place for 40-45 minutes, until they again increase in volume almost twice. Put the forms in the center of the oven and bake buns at 190 degrees to golden brown, about 20 minutes. Remove from the oven and allow to cool for 10 minutes. 5. Prepare the glaze. Combine the cream cheese, sugar powder, butter and vanilla extract in a medium bowl. Beat with a mixer until smooth. Lubricate the finished buns with icing. Serve warm or at room temperature.
