The color of jam from gooseberry depends on the color of the berries- from light green to amber and darker. Therefore, if, of course, you are important, you can "adjust" the desired color. Berries for jam are firm, in other words, not quite ripe. We eat soft berries or let them go to the wine. The process of making jam from gooseberry is quite laborious, but it's worth it. Jam comes out not only amazingly tasty, but also very useful! So, to make jam from gooseberries: 1. Wash the gooseberries, peel them from the stems, cutting them. Dry it in a colander or a kitchen towel. 2. With a toothpick, nib every berry, so that the peel does not slip during cooking. 3. Put berries in a bowl and sprinkle with vodka. Then send for 20 minutes to the freezer. After that, put the berries in the refrigerator for 10-12 hours or all night. 4. After the specified time, we select the berries. Cook the syrup from the sugar and two glasses of water. The syrup should be light. 5. Put the berries in the syrup, mix them very gently or shake them. Bring the mass to a boil, and as soon as the bubbles appear, remove from heat. 6. Let the syrup with the berries cool, pour the syrup through a colander, bring it back to a boil and put the berries. Simply put, repeat the procedure described in step 5. If we want to get high-quality jam, this procedure should be repeated 2-4 times. 7. The last time the jam is cooked for half an hour until ready.
