Recipe: Salmon baked in puff pastry

Salmon in a crust The original name of the dish -"Salmon en crote", which literally translated as "salmon in a crust." In fact, this dish has long been loved by the French and is practically unknown in our latitudes. The same crust, which is mentioned in the name of the dish, is nothing more than a dough in which the salmon is baked. It can be puff, yeast and even lean. Choose you. By the way, this recipe was once presented by the famous British chef Gordon Ramzi. Ramzi is known for being the first Scotsman to receive three stars from the Michelin Red Guide, which is the highest possible rating from an authoritative restaurant rating. Such an assessment indicates that the work of the chef in this restaurant is beyond praise and for the sake of it it is worthwhile to visit the mentioned institution. Also Gordon Ramsey is known for his sharp and explosive character, but this, fortunately, only relates to personal qualities. As for the dishes, which are advised by the chef, there is nothing to doubt.

  • Puff pastry 500 g
  • Salmon 600 g
  • Butter 50 g
  • Lemon 0.5 pcs.
  • Fresh dill 0.25 bunch
  • Basil purple fresh 0.25 bunch
  • Pepper black ground 4 pinch
  • Olive oil 50 ml
  • Salt 0.25 tsp.
  • Step 1 For this dish prepare: ready-made puff pastry, salmon, lemon, basil, dill, butter.
  • Step 2 Rinse and dry the fish with paper napkins. Separate fillets from skin and bones. Salt and pepper. Sprinkle with lemon juice.
  • Step 3 Cut the greenery as small as possible. Grate the lemon peel.
  • Step 4 Mix the dill, basil and lemon peel with soft butter. Salt and mix well.
  • Step 5 Roll the dough on parchment paper and grease it with olive oil. Before rolling the dough, hold it in the fridge. So it will be more elastic.
  • Step 6 In the middle of the rolled dough sheet, put half the fish and roll it onto it to lay the creamy mass with the herbs.
  • Step 7 Lay out the remaining fish so that a sandwich with a layer of greens is obtained. Add the dough.
  • Step 8 Roll the dough envelope. It's great to help out the baking paper, just throw the dough over the fish and separate the paper.
  • Step 9 Put the roll with the fish so that the seam is from the bottom. Lubricate the top with olive oil (you can have an egg yolk) and make a few cuts. Bake in a preheated oven for 200-30 minutes for 25-30 minutes.
  • Step 10 The dish should be served with a green salad or potatoes.
