Recipe Carrot Soup

  • Carrots - 450 Grams

  • Cilantro - 1 Piece (fresh)

  • Vegetable broth - 1.2 liters

Ingredients for carrot soup and preparation: Cut the carrots, roughly chop the onions, remove the stems and roughly chop the coriander leaves. Heat the olive oil in a frying pan over medium heat. Add the carrots and onions. Fry for 5 minutes. Sprinkle with dried cilantro. Transfer the contents of the frying pan into a large saucepan. Add salt and pepper. Pour the vegetable broth and bring to a boil. Cook over low heat for 20 minutes. Stir the soup several times during its preparation. Mix the soup in a blender until creamy. Salt and pepper to your taste. Add chopped fresh coriander leaves. Serve the soup with French rolls or fresh rye bread. Bon Appetit!
