How to cook soup from sturgeon? Very simple! The ear is usually cooked from the head or tail of a fish. However, all the necessary ingredients in this recipe are indicated subjectively. Sturgeon come in different sizes. My sturgeon was very large, so only one tail came out almost half a kilogram. You, of course, can get a little different. Step 1: Take the head or the tail of the fish (preferably the tail) thoroughly rinsed in running water. Then we put it in a pan, fill it with water and put it on the fire. Cook for 20-25 minutes over medium heat. Step 2: As soon as the water boils, reduce heat and cover with a lid. It is very important! Otherwise, the fish can fall apart and turn into a mess. Do not forget to salt and pepper. Step 3: While the fish is brewed, grate carrot on a grater, chop finely onions. We make a roast in butter. To prevent the vegetables from burning, you can add a few spoonfuls of broth to the skillet, as well as a spoonful of tomato paste. Pepper, salt and add other seasonings (to your taste). Stew it under the lid for about 7-10 minutes. At this time, we clean the potatoes. Step 4: Once the fish broth is ready, we take the fish out of it, clean it of the skin, bone and divide into smaller pieces, then return the pieces back to the pan. Step 5: Then add the diced potatoes and roast into the broth, strengthen the fire and bring it to a boil. Then we reduce the heat and cook for a few more minutes.
