Recipe Cookies with Cheddar cheese

  • Flour - 2 cups

  • Sea salt - To taste (optional) for lubrication and sprinkling)

1. Preheat the oven to 220 degrees. Mix the flour, baking powder and salt in a bowl. Add the chilled butter to chunks and mix with a mixer at low speed until the mixture looks like a large crumb. 2. Mix buttermilk and egg in a small measuring cup, whisk with a fork. Add the egg mixture to the flour mix and beat it with a mixer at a low speed. 3. In a small bowl, mix the grated Cheddar cheese and a small handful of flour. 4. Add cheese to the dough and mix at a low speed. 5. Put the resulting dough on a well-floured surface and knead well 6 times. Roll the dough into a rectangle measuring 12x25 cm. 6. Sprinkle the kneaded dough knife in half and then crosswise to get 8 rectangles. You can make 12 smaller rectangles. 7. Lay the cookies on a baking sheet lined with parchment paper. Beat the egg with 1 tablespoon of water or milk. Use a brush to grease the biscuit with an egg mixture. Sprinkle with sea salt, if used. 8. Bake in the oven for 20-25 minutes until the cookie is browned. Serve hot or warm.
