Recipe Mushroom pasta with ricotta

In a large saucepan with boiling salted waterBoil the pasta until cooked. Set aside 3/4 of the liquid remaining after cooking, drain the water and return the pasta to the pan. Meanwhile, in a large frying pan, melt 1 tablespoon oil over medium heat. Add onion and fry until soft, about 4 minutes. Add wine and cook until most of the liquid evaporates, 4 to 6 minutes. Add mushrooms, season with salt and pepper and cook until brown, about 8 minutes. Remove the frying pan from the fire and add 1 tablespoon of butter. Add the mushroom mixture, ricotta and lemon juice, mix. Add sufficient liquid. Sprinkle with Parmesan cheese and serve.
