Recipe of Fritat with potatoes and sweet pepper

  • Olive oil - 1 st. a spoon

  • Potatoes - 450 Grams

  • Large eggs - 8 pieces
  • Fresh rosemary - 2 teaspoons

Preheat the oven to 200 degrees. In a frying pan heat 1 teaspoon of oil over medium heat. Add onions and sweet peppers, fry, stirring until the onion is slightly brown, about 5 minutes. Put in a bowl and set aside. Heat the remaining 2 teaspoons of oil in a frying pan. Add the potatoes, season with salt and pepper. Fry over medium heat, stirring frequently, until the potatoes become soft and slightly brown, about 10 minutes. Put the potatoes in a bowl with onion and pepper, stir. Put the mixture on a frying pan and level with a spatula. In a large bowl, beat the eggs with rosemary, 1/2 teaspoon of salt and 1/8 teaspoon of pepper. Pour the egg mixture over the vegetables. Bake for 15 to 20 minutes. Cut into slices and serve.
