Recipe Couscous with white and green asparagus
- Chicken broth - 1 1/2 cups
- Cereals couscous - 1 cup
- Asparagus - 330 Grams (green and white)
- Salt and freshly ground black pepper - - To taste
- Arugula - 1/4 Cups
- Olive oil - 2 teaspoons
In a medium saucepan bring chicken broth toBoiling. Add the couscous croup, stir and bring to a boil. Remove from heat. Cut the asparagus in half. You should get about 2 cups. In a large saucepan with boiling water, blanch the asparagus, and then put the asparagus in a bowl filled with ice water. Season the couscous with salt and pepper. Add the asparagus, cover and let stand for 5 minutes. Stir with a fork and put into a bowl. Add olive oil, rucola, season with salt and pepper and serve.
