The day before, rinse the salted cod underCold water to remove excess salt. Then put in a bowl filled with cold water and soak overnight. Take the fish out of the water and put it in a saucepan. Pour cold water, and just cook over low heat. Water should not boil, otherwise the cod will become rubber. Ideally, cook 10 minutes. Once the cod becomes opaque - get it. Let cool and rip into small pieces, remove the skin and bones. Cut out puff pastry circles, 2 cm in diameter wider than your tureens. Cover with whipped yolk, you can make patterns from above, remove while in the refrigerator. Peel, wash and cut vegetables into small pieces of the same size. Turnip small triangles. Chop the leeks. Cut green beans into small lengths. Carrots are small triangles. Green peas only clean, it will be added in its raw form. Boil water, salt. Dip your turnips in boiling water until it is almost ready, still a little crispy. Then get it and immediately put it in cold water. Dry it on the towel. Do the same with all vegetables (except green peas). Peel the mushrooms, cut into small pieces. In a frying pan, melt some butter and add the mushrooms, fry 2 - 3 minutes on high heat. When ready - add lemon juice, salt, pepper. After all the vegetables are cooked and dried, put a piece of butter on a frying pan, melt and add chopped shallots. Fry for one minute, add salt, pepper and all vegetables, stir and add cod. Do not cook more, just mix the ingredients. Preheat the ovens to 240 ° C. Fill the soup tureen with a mixture of vegetables and fish. Pour in 2 tablespoons of cream each. Add a pinch of salt and pepper. Moisten the edges of soup tureen with water. Put the puff pastry circles on top. Slightly tighten and fasten. Do the same with all and put on a baking tray. You can use glass jars from jam, for example. Put in the oven until the dough turns golden brown.
