1. Prepare the dough. Cut the butter into small pieces. In the food processor, mix the dry ingredients for a few seconds, then add the vegetable fat and mix until the mixture looks like wet sand. 2. Evenly put the sliced ​​oil on top and mix until the dough again looks like wet sand. 3. Put the mixture in a large bowl. Add about 6 tablespoons of cold water and mix with a spatula, adding more water if the dough is too dry. Put the dough on a lightly floured surface, trying not to mix it for a long time. 4. Divide the dough in half, wrap each part with a film and put in the refrigerator for at least 2 hours or at night. 5. Make the stuffing. Peel the apples from the peel and the core, cut into pieces. Put the pieces of apples in the lemon juice and finely grated zest, put aside. In a medium bowl, mix the flour, sugar, spices and salt. Add apples and mix. Preheat the oven to 200 degrees. To lace 2 trays with parchment paper or silicone mats. 6. Take one part of the dough from the refrigerator and roll it into a square of 30x30 cm. Cut the square into rectangles, about 10 cm wide and 15 cm long. You need to get 8 to 10 rectangles. Lay out 4 to 6 rectangles (depending on the size of the baking tray) on the prepared baking sheet. Lay out about half the filling on top of the rectangles. Cover the remaining rectangles on top and cover the edges. This can be done with a fork. 7. Lubricate each pie with a lightly beaten egg white, decorate with diced apples if desired and again grease with protein. Sprinkle a teaspoon of sugar with each pie. 8. Repeat with the remaining dough and filling. Bake for 30-40 minutes, until deep golden brown. Let cool for a couple of hours before serving.
