If you have a whole sturgeon, then we start by saying thatRinse thoroughly the fish from the mucus under running water, release the carcass from the giblets and cut into medallions. If you have ready-made steaks from the store, then just thoroughly rinse and drain them. Next we prepare marinade for sturgeon. To make a marinade in a convenient bowl, mix: wine, vegetable oil and lemon juice. Steaks properly salted and peppered and pounded in a marinade and sent the fish for several hours in the refrigerator. Then warm up the home grill or oven in grill mode and grease the grate with vegetable oil. In the case of baking sturgeon in the oven, a baking tray must be placed under the grate, since the fish is oily and can drip down the entire chamber. Then put the medallions on the grid and cook the fish for about 20-30 minutes. While the fish is preparing, we will engage in garnish. The best side dish for oily sturgeon is vegetables. To your taste, vegetables can be served both fresh and cooked in a grill together in a fish.
