Compote of black currant

  • Sugar - 600 Grams

Ripe and fresh black currant need a goodClean, remove from litter and pedicels, wash twice and allow to dry. Then we spread the currant on dry sterilized jars - fill the currant with about a quarter of the can. Berries should occupy about a quarter of the volume of the can - then the compote will be sweet, but not too sugary. Fill the jars with the berries with boiling water, let stand for 5-10 minutes, then drain the water back into the pan and boil, adding all the sugar. Bring to a boil and pour back on the jars. Immediately roll up the jars. For one hour we turn them upside down and wrap them in some blanket, and then we send them to storage in any dry and cool place.
