Celery Soup Recipe

  • Celery - 700 Grams

  • Water or vegetable broth - 900 Milliliters

  • Milk - 300 Milliliters

1. Peel the celery, cut into strips 5.5 cm long. Peel and chop the onions. Put all the vegetables in a saucepan and pour with vegetable broth or water. Bring to a boil, reduce the gas, cover the pan with a lid and cook over low heat until all vegetables become tender. This will take approximately 20 minutes. 2. While the vegetables are being prepared, let's start cooking white sauce. Melt butter in a clean pan, add flour, mix well and cook for a minute or two. Gradually pour in the milk, mixing thoroughly, then let it simmer for a few minutes to make the flour ready. Remove from fire. When the vegetables are ready, turn them into a puree with a blender. 3. Pour the white sauce into the vegetable puree and mix well. Preheat the soup without boiling, and immediately serve on the table with a few slices of fresh bread.
